Matching Wine with Cheese

No dining table would be complete without a small selection of cheeses, most of which have a wonderful affinity with wine. When planning your cheese platter it is best to choose at least one cheese from each of the families below:

Soft Cheese Family

Soft cheeses range in texture from the almost custard-like to those that are just shy of semi firm.
Examples: Brie, Camembert

Aged Cheese

Aged cheeses have had the chance to mature, to become firm to the touch, to develop a full range of earthy, nutty, sharp flavours.
Examples: Farmhouse Cheddar, Pecorino

Blue Veined Cheese Family

Distinctive and beautiful strains of blue or green, often strong smelling with rich, tangy, piquant, lingering tastes.
Examples: Roquefort, Stilton
